Potatoes (peeled) – 10 each
Bacon slices – 5 strips
Curry leaves – 20 leaves
Plain flour – 2 bowls
Eggs – 2 each
Salt – Desired
Herbs
Pepper – Desired
Oregano & Basil Blend – Desired
Steps
- Boil potatoes till soft, drain and set aside in a big bowl;
- Pan-fry bacon with curry leaves till crispy. When cooled, use kitchen scissor to cut bacons slices into bits; set aside;
- Add bacon bits, balance oil from frying pan, and all Herbs into the big bowl and mash together with the potatoes;
- Wet your hands, scoop 2 spoons of mashed potato mixture into your palms and mould the mixtures into round shape patties;
- Coat each patty with beaten egg then with flour, set aside;
- Heat up frying-pan, small fire, add oil, deep fry patties till golden colour.
- Drain the oil and serve.
