Duck (1.5kg) – 1 each
Dried-oyster – 10 each
Dried-chili – 10 sticks
Ginger – 5 slices
Sauces
Light sauce – 10 table spoons
Dark sauce – 5 table spoons
Oyster sauce – 5 table spoons
Chinese wine (hua-diao) – 10 table spoons
Sesame oil – 3 table spoons
Steps
- Boil one pot of water;
- Add Duck and all Ingredients and Sauces and boil for 45-50 minutes in medium fire;
- Remove Duck, put aside to cool before cutting into bite sizes, display on a big plate;
- In a separate pot, boil with small fire, 2 bowls of duck sauce with added corn-starch;
- Pour the sticky duck sauce over chopped pieces of duck. Garnish with some spring onions;
- Goes well with boiled rice.
