Serves 10Ingredients
Duck (1.5kg) – 1 each
Young Ginger (smash slightly) – 200 grams
Garlic – 6 bulbs
Spring Onion (cut 4inches long) – 10 sticks
Sea salt – 3 table spoons
Sesame oil – 5 table spoons
Dapping Sauce
Duck oil and gravy – ½ bowl
Garlic (chopped fine) – 1 bowl
Chinese Parsleys (chopped fine) – 1 bowl
Fine Salt – ½ table spoon
Lime juice – 1 table spoon
Steps
- Boil one pot of water (sufficient to submerge whole duck);
- Add all Ingredients and cook for 45-50 minutes in small fire;
- Remove Duck, apply more sesame oil on body, put aside to cool, chop into bite sizes, display on a big plate;
- Mix Dapping Sauce in a bowl, set aside;
- Enjoy with plain rice and daps of Dapping Sauce. Goes well with pounded chili added with sprinkles of lime juice!
