Serves 10Ingredients
Chicken (1.5kg) – 1 each
Young ginger (chopped fine) – ½ bowl
Spring Onions (cut small cubes) – 1 bowl
Sauces
Fermented Bean Curd – 10 cubes
Sesame oil – 5 table spoons
Sugar – 2 table spoons
Steps
- Steam or boil chicken for 30 minutes, set aside;
- Chop chicken to bite sizes, display on serving plate;
- Heat wok, medium fire, add Sesame Oil, stir fry Young Ginger and Fermented Bean Curds for 10 minutes;
- Add 8-10 table spoons of chicken stock, ½ bowl of Spring Onions, Sugar and stir for another 5 minutes;
- Pour the Fermented Chicken Sauce over the chopped chicken pieces;
- Garnish with more Spring Onions;
- Best served warm. Goes well with boiled (plain) rice (Note: Do not go with chicken rice).
