Duck (1.5kg) – 1 each
Sea cucumber (wet) – 2 each
Garlic (unpeeled) – 2 bulbs
Ginger (slices) – 5 slices
Red dates – 3 each
Corn-starch – Desired
Water – Desired
Sauces
Light sauce – 5 table spoons
Dark sauce – 2 table spoons
Oyster sauce – 5 table spoons
Chinese Hua Diao wine – 10 table spoons
Sesame oil – 3 table spoons
Sugar – 2 table spoons
Cleansing Ingredients
Ginger slices – 5 slices
Spring onion (cut strips) – 3 stalks
Chinese Hua Diao wine – 1 bowl
Water – ½ bowl
Steps
- Cut duck and Sea Cucumber into bite size, set aside;
- Boil Sea Cucumber with Cleansing Ingredients for 10 minutes with small fire. Rinse Sea Cucumber, set aside;
- Heat up clay pot, add oil, big fire, and stir fry ginger slices and duck for 10 minutes. Add all Sauces and fry for another 15 minutes before adding desired water.
- When boiled, turn to small fire, add Sea Cucumber, Garlic and red dates and simmer for 1 hour.
- De-oil, add corn-starch for stickiness.
